- Aprovisionarse solo de la materia prima necesaria en función del stock mínimo y máximo definido para cada artículo, centro de venta y almacén.
- Realizar inventarios periódicos es fundamental para la optimización de las compras y la valoración de las desviaciones entre el stock teórico y el real, ya sea para un grupo de productos, para un solo centro o un almacén/cocina central.
- El control del consumo propio o del personal es indispensable para cuadrar la gestión de stocks y desviaciones. Los costes acumulados anuales de esta partida son importantes aunque no aparentes en el día a día.
- Conocer los hábitos y gustos de tus clientes es fundamental antes de afrontar un cambio de carta. La estadística de producto/familia es básica para conocer el grado de aceptación de un producto y su representación beneficio/coste en el balance.
La inversión en tecnología de la información deberá suponer una reducción de costes operativos y de oportunidad. La inversión (puntual) siempre debe compararse con los costes reales (repetitivos) que nos ahorramos, teniendo en cuenta que el coste más importante de un negocio de restauración es el coste de la “no calidad”, de las cosas hechas a ciegas.
